The state of Florida has approved a Mulberry-based company to use a small dose of radiation to zap oysters. Agriculture Commissioner, Charles Bronson, says the procedure is going to be used to reduce the amount of harmful bacteria found in the shell fish without damaging its flavor or appearance.
A bacteria known as Vibrio Vulnificus, is commonly found in seawater and oysters during warm months. These bacteria can lead to serious illness if consumed by someone with immune disorders such as liver disease and can ultimately result in death. If the radiation process works as expected, all bacteria and harmful substances will be eliminated from the fish to provide for healthier meals. Bronson says it’s the first activity of its kind in the entire country.
