Larkspur - Vail, CO


Larkspur was far and away the best restaurant we came across during a recent trip to Colorado - so good, in fact, that we went twice in the same day. While eating a burger there at lunch, we looked over the dinner menu and decided to go back that night. See below for what we had:

Porcini Dusted Sweetbreads
mushroom duxelles, pearl onions, mustard sauce

Torchon of Duck Foie Gras
pear compote, mexican chocolate, villa manodori

Roasted Pork Belly
apple-sylvetta puree, cipollini onions, soy-honey glaze

New York Strip and Beef Short Ribs
king trumpet mushrooms, potato-shallot puree, bordelaise, curry oil
