Eating At Proof On Main Twice In One Day


We're staying at 21C in Louisville, so why go anywhere else besides the hotel's restaurant, Proof On Main? Lunch consisted of:
Warm Ricotta
grated horseradish, oregano, white truffle
Roasted Octopus
parsley, oregano, garlic
Chickpea And Country Ham Fritters
treviso, grain mustard aioli

Then came dinner:
Salad Of Kentucky Peaches
double smoked ham, grilled corn, pickled onion, ricotta salata
Heirloom Tomatoes
local cucumber, opal basil, shaved onion, fresh mozzarella
Yellowfin Tuna Crudo
shaved bunch carrots, avocado, local cilantro
Hand Made Cavatelli
duncan farms rabbit, parcel, parmigiano
Pan Roasted Wild Striped Bass
sweet corn, scallions, cous cous
Berkshire Pork Chop
braised summer cabbage, local pear marmalade
Milled Kentucky Grits
simmered with milk, olive oil and parmigiano
